Our white shredded young jackfruit, cut into 8 mm, is specially developed for food professionals looking for a clean-label, fiber-rich, and versatile meat alternative.

Application:

Ideally suited as a raw material for hybrid minced meat, or for hybrid and vegan mince-like products such as meatballs, sausages, and chicken-style nuggets.

Rehydration

To ensure optimal performance in your final product, it is essential to properly rehydrate the dried jackfruit before use. We recommend rehydrating the jackfruit with 6 to 7.5 parts of water, broth, or another liquid of your choice, depending on the specific application.

For products where the jackfruit is expected to absorb additional moisture during or after processing, such as hybrid applications, a rehydration ratio of 1:6 is ideal.
For applications where the jackfruit should not absorb any further moisture from the final product, such as vegan meatballs, a rehydration ratio of 1:7.5 is more suitable.

Rehydrate the dried jackfruit for 30 minutes in hot water or 8 hours in cold water to achieve the desired texture and moisture content. After rehydration, ensure the jackfruit is thoroughly drained before incorporating it into your production process.
